Dough for One

I developed this pared down recipe as an answer to the need of only needing one meal's worth of dough for whatever it may be... A single small loaf, four dinner rolls, flatbread wraps, pizza crust., bread bowls, this recipe can be adapted to any menu.

The recipe:

1c all purpose flour
1/2c whole wheat flour
1T vital wheat gluten
1/2t salt
2T brown sugar
1t yeast
3/4c water
extra flour for kneading
olive oil for rising

Mix together dry ingredients.
Add water and incorporate dough. It will be sticky.
Gradually add extra flour and knead well until dough is just springy and non sticky. Form dough into ball. Coat with olive oil and cover with towel. Set in warm place to rise. I chose a cozy little corner next to a radiator.

Once dough has doubled in size, punch down and now is where you can get creative. Depending on how the dough needs to be used, now is the time to roll into pizza dough, shape into rolls, or any other fun shape such as bread bowls or forming into pretzels or bagels.

Please don't be worried about the time needed in making fresh dough. it takes five minutes to put together this dough. It's dry ingredients and water, that's all. This does not need any further prep work other than the initial rise... oh and a tip to raise bread on a workday: In the morning, mix the dough and prepare for raising. Set the bowl in the fridge. Have a good day at work. When you come home, your bread dough will be risen and ready to work with.
