Vegetarian for a Carnivor?


You know you've scored when you have been able to get your red meat, pizza lovin hubbie to not only eat vegetarian, but taste tester results... it was compliments on the meal! And we cleaned out the fridge at the same time... Whoa... that's a biggie!!

This was the feast:

Spinach Edamame Pasta
Tossed salad: tonight it was spinach, lettuce, red onion, dressing of choice and salad sprinkles
Fresh tomatoes, wedged

Pretty straight forward meal, preparation-wise... but a couple keys to feeding your own personal carnivore a vegitarian meal:

  • If half your meal is salad, give your carnivore a favorite dressing and add ins. Nut's fav is blue cheese, so he gets it... in moderation. Also, sprinkles in the form of sunflower seeds and bacon bits... (if fat is of concern, use the TVP bacon flavored chips... yummy, crunchy and no saturated fat)

  • Have an additional vegetable that your carnivore likes. Nut loves tomatoes. We had plum tomatoes, which I wedged due to size, but if you have a big beefsteak tomato, slice them thick!

  • Now the pasta... our carnivore needs protein. Though this is a vegetarian pasta, remember the pasta itself has protein. Then the edamame: sweet, slightly crunchy, bright green, and because it is a green soybean, packed with protein and fiber. Not to mention the parmesan cheese... more protein! Recipe below.

Spinach Edamame Pasta

1c edamame thawed
2 big handfuls spinach
5 cloves garlic, coarsely chopped
1t thyme
1/4t ground nutmeg
salt/pepper to tast
chicken stock to loosen

Put all ingredients in blender with enough chicken stock to make a thick sauce.

Set choice of pasta to boil (we used spaghetti, but that's what we had... whatever you have on hand will be great with this sauce). While pasta is boiling, pour sauce into saucepan and simmer until pasta is done. Drain pasta and mix with sauce. Garnish with shredded or grated parmesan cheese.
